Chocolate is a tasty food made from roasted and ground cocoa beans. These beans come from the seeds of the cacao tree (Theobroma cacao). After being fermented, dried, and roasted, the beans are ground into something called chocolate liquor. This can be turned into different kinds of chocolate by adding sugar or milk. You can find chocolate in many yummy forms, like dark chocolate, milk chocolate, and white chocolate.

Chocolate is loved all around the world and is used in many foods, especially desserts such as ice creams, cakes, mousse, and cookies. It’s also found in candies and chocolate bars, which people enjoy eating as snacks. Chocolate is often given as gifts shaped like eggs, hearts, or coins for special occasions like Christmas, Easter, Valentine's Day, Hanukkah, and Eid al-Fitr. You can also drink chocolate in beverages such as chocolate milk, hot chocolate, and chocolate liqueur.

People have been enjoying chocolate for thousands of years. It was first used in what is now Ecuador over 5,000 years ago. Ancient Mesoamerican cultures drank cacao beverages, and later, in the 16th century, chocolate was introduced to Europe. For a long time, only wealthy people could afford chocolate. But in the 19th century, new ways of making chocolate let everyone enjoy solid chocolate. Today, most cocoa beans come from West African countries like Ivory Coast and Ghana.

Etymology

The Maya glyph for cacao

The word "chocolate" comes from Spanish. It was first used in English in 1604 and in Spanish in 1579. Many people think it comes from the Nahuatl word "chocolatl." But early texts use a different word, "cacahuatl," meaning "cacao water."

Other ideas say it might come from a Nahuatl word for "bitter drink" or from a Mayan word for "hot water." But there isn’t strong proof for these ideas. Some think it comes from the Nawat word "chikola:tl," possibly meaning "cacao-beater." Anthropologist Kathryn Sampeck says chocolate originally meant a special cacao drink from Guatemala today.

History

Main article: History of chocolate

The story of chocolate starts thousands of years ago. People in South America, especially around Ecuador, used the cacao tree as early as 5300 years ago. The Mayans and Aztecs in Mesoamerica valued cacao a lot. They used it in ceremonies and as a kind of money.

When Spanish explorers like Hernán Cortés saw chocolate in the 1500s, they brought it back to Europe. Over time, people in Europe learned to enjoy chocolate, especially when it was sweetened. By the 1800s, new machines made it easier to make chocolate for everyone, turning it from a drink into a popular food.

Types

Barks made of different varieties of chocolate

Chocolate comes in many different forms, each with its own taste and feel. Pure, unsweetened chocolate, often called baking chocolate, is made from cocoa solids and cocoa butter. The most common type is sweet chocolate, which mixes chocolate with sugar.

There are several popular kinds of eating chocolate, such as dark, milk, and white chocolate. Dark chocolate has more cocoa, milk chocolate includes milk solids, and white chocolate is made only from milk solids and looks light in color. Other types include raw chocolate made from unroasted beans, ruby chocolate, and gianduja, which mixes nut paste into the chocolate. For baking and special treats, there are types like baking chocolate, couverture chocolate for coating, compound chocolate, and modeling chocolate made with corn syrup or similar ingredients.

Cacao

Chocolate is created from the cocoa bean. A cacao tree with fruit pods in various stages of ripening.

Chocolate comes from cocoa beans. These beans are the dried seeds of the cacao tree Theobroma cacao. The cacao tree is a small, evergreen tree that grows best near the equator. It needs lots of rain and warm weather to thrive. The fruit of the cacao tree is called a cocoa pod. It is large and colorful when it is ripe.

The name Theobroma means “food of the gods.” Scientists have discovered many different groups within the cacao tree. They once thought there were only three main types.

Processing

Cocoa pods are picked when they are ripe. The beans inside are taken out and placed in piles to ferment. This helps the chocolate develop its flavor.

After fermenting, the beans are dried, cleaned, and roasted. The outer shell of each bean is removed to get the nib. The nibs are ground into something called chocolate liquor. This can be made into cocoa solids and cocoa butter. The chocolate is smoothed out in a process called conching. Finally, the chocolate is molded into shapes like chocolate bars.

Health effects

Chocolate gives you energy and has many useful nutrients. For example, 100 grams of milk chocolate has about 540 calories. It contains carbohydrates, fat, and protein. Chocolate is a good source of vitamins and minerals, such as riboflavin, vitamin B12, manganese, phosphorus, and zinc.

Chocolate also has special compounds like polyphenols and flavan-3-ols. It includes tiny amounts of caffeine and theobromine. These may be good for you, but more study is needed. It is important to eat chocolate in small amounts because it has a lot of fat and sugar, which can be bad for health if you eat too much.

Labeling

Some chocolate bars tell you how much chocolate is inside by using labels that say “cocoa” or “cacao.” This number includes the solids and butter from the cocoa beans. Special marks like the Belgian AMBAO show that only real cocoa fats were used.

Chocolates that are organic or fair trade certified have labels that tell you this information. Different countries have different rules about what can be called “chocolate” and what must be written on the label.

Industry

Chocolate is a big business. Many people around the world enjoy chocolate. Major companies like Mars and Hershey’s make most of the chocolate in the US. Most cocoa beans, the main ingredient in chocolate, come from West Africa, especially from Ivory Coast.

There are two main jobs in making chocolate candy: chocolate makers and chocolatiers. Chocolate makers turn cocoa beans into couverture chocolate, while chocolatiers use this to create chocolate bars and truffles. Some well-known chocolate brands include Cadbury, Ferrero, Hershey’s, Lindt, and Mars. These companies make many kinds of chocolate treats, from bars to Easter bunnies.

Chocolate comes in many forms, such as chocolate bars like dark chocolate, milk chocolate, and white chocolate. Some bars mix chocolate with other ingredients like nuts, raisins, or crisped rice. Chocolate is used in many sweet foods, including desserts like chocolate cakes, chocolate brownies, chocolate mousse, and chocolate chip cookies. It is found in candy and snacks, either as a filling like in M&M's or as a coating, such as chocolate-coated raisins or chocolate-coated peanuts.

Chocolate is also enjoyed in drinks like chocolate milk, hot chocolate, and chocolate milkshakes. Many people love chocolate ice cream and pudding, often adding chocolate sauce on top of sundaes. The caffè mocha is an espresso drink that includes chocolate.

Society and culture

Chocolate is enjoyed in many ways and means different things to different people. It is often a sweet treat, a special luxury, or something that makes people feel better, thanks to smart advertising. It is also used in festivals and special days. For example, during Easter, many people give chocolate rabbits and eggs. During Hanukkah, chocolate coins are traditional gifts. On Valentine's Day, chocolate hearts are popular gifts often given with flowers and greeting cards.

Chocolate has inspired books and movies too. In 1964, Roald Dahl wrote Charlie and the Chocolate Factory. This book was later made into films in 1971, 2005, and a prequel in 2023. Artists have also used chocolate in their work to explore ideas about how we see and enjoy things.

Flavors

Mint chocolate is a tasty flavor made by adding mint, like peppermint or spearmint, to chocolate. You can find it in many treats such as candy, cookies, ice cream, and hot chocolate. Mint chocolate comes in different types, including milk chocolate, dark chocolate, or white chocolate. Some companies even use mint chocolate flavors in cosmetics for a refreshing scent. Every year on February 19, the U.S. National Confectioners Association celebrates "Chocolate Mint Day."
