Fuling jiabing (simplified Chinese: 茯苓夹饼; traditional Chinese: 茯苓夾餅; pinyin: Fúlíng jiābǐng), also known as Fu Ling Bing or Tuckahoe Pie, is a traditional snack food from Beijing and an important part of the city's culture. It is a pancake-like treat made with flour, sugar, and fuling, which comes from a special fungus called Poria. Sometimes, another type of fungus called Wolfiporia extensa is used, and it comes from Yunnan province. People believe this ingredient helps with health in traditional Chinese medicine.
The pancakes are often filled with nuts, honey, and other tasty ingredients, and they can even be cut into pretty shapes. In the past, Fuling jiabing was enjoyed by royal family members and important government workers during the Qing Dynasty. Today, it is a favorite snack for many people in Beijing. One of the most famous places to try it is Daoxiangchun, known for making excellent Fuling jiabing.
