The cheese is left to mature, or "age," for about 14 to 24 months. During this time, it develops its special flavors and textures, making it a favorite among cheese lovers.

Because it is made from unpasteurised milk, Lincolnshire Poacher has a rich taste that many people enjoy. It is one of the many delicious cheeses that come from the United Kingdom, showing the skill of local food makers.

Awards

Lincolnshire Poacher cheese has won many awards. It was named Supreme Champion at the British Cheese Awards in 1996/7 and Best British Cheese at the World Cheese Awards in 2001/2. It also earned Gold Medals at the British Cheese Awards in 2003/4 for both its regular and smoked versions.
