Lincolnshire Poacher is a special kind of hard cheese made from the milk of cows. It has a unique shape like a cylinder and a rind that looks like granite. This cheese is created at Ulceby Grange Farm in Alford, Lincolnshire, by a craft cheesemaker named Richard Tagg.
The cheese is left to mature, or "age," for about 14 to 24 months, depending on when the milk was collected. During this time, it develops its special flavors and textures, making it a favorite among cheese lovers.

Awards
Lincolnshire Poacher cheese has won several top prizes. It was named Supreme Champion at the British Cheese Awards in 1996/7 and Best British Cheese at the World Cheese Awards in 2001/2. It also received Gold Medals at the British Cheese Awards in 2003/4 for both its regular and smoked versions.
