As of the 2026 Michelin Guide, there are 659 restaurants in France with a Michelin star rating. These special awards show that a restaurant makes very good food.
The Michelin Guides started in 1900 by a French tire company called Michelin. At first, they were made to help drivers find nice places to eat, and also to encourage people to drive more so they would need new tires. Over time, the stars became very important and people worked hard to get them.
Many anonymous inspectors visit restaurants many times. They look at five important things: how good the food is, how well the chefs cook, how special the dining experience is, if the food costs a fair price, and if all the inspectors agree. If they all think a restaurant is great, it can get one, two, or three stars. One star means the food is very good and worth stopping for. Two stars mean the food is excellent and worth a trip. Three stars mean the food is amazing and worth a special journey. The stars can be taken away if the restaurant does not keep up the good quality.
