Gristmill

A gristmill (also known as a grist mill, corn mill, flour mill, feed mill or feedmill) grinds cereal grain into flour and middlings. The term can mean the grinding part or the building that holds it. Many old farms used gristmills to change their crops into food we can use.

Grist is grain that has been separated from its chaff before grinding. This makes the grain easier to mill and helps make better flour. Gristmills were very important long ago because they let people change their harvests into bread and other foods.

These mills were often powered by water or wind, showing how people used nature to help with daily work. Today, most flour is made in big factories, but the idea of a gristmill still reminds us of how our ancestors prepared food.

Long ago, people used water to help turn grains into flour. The writer Strabo wrote about a water mill before 71 BC. Early mills had wheels made of paddles that turned a stone to grind grain. These mills needed fast water and were often built in mountains.

Later, vertical wheels were used, especially in the Roman Empire. These could grind lots of grain. Water mills kept being used even after Roman times, and wind mills were built in places like Afghanistan, Pakistan, and Iran.

By 1086, there were many water mills in England. These mills were important to villages because they made flour for bread.

A gristmill was a local mill where farmers brought their grain to be ground into flour. The mill owner took a small part of the grain as payment. Most mills were powered by water, but some used wind or animals. Water turned a wheel, which moved the millstones that ground the grain.

Inside the mill, grain was poured onto the millstones. The ground flour was collected in sacks. Some mills were made automatic by Oliver Evans, who created machines to move grain and flour with fewer workers.

Modern mills often use electricity or fossil fuels to power large steel or iron rollers. These rollers separate the outer parts of the grain, called the bran and germ, from the inner part, called the endosperm. The endosperm is then ground to make white flour, which can sometimes be mixed back with the bran and germ to make whole grain or graham flour.

Different milling methods can create flours that look different, but they can also make flours that work the same way and have similar nutrition. Many bakers and people who like natural foods prefer stone-ground flour because it has a nice texture and flavor. They believe it keeps more nutrients because the stones grind slowly and don’t make the grain too hot, which helps protect the vitamins. Stone-milled flour often has more thiamin than other types of flour, especially when made from hard wheat.

Gristmills only grind grains that have had their stalks and chaff removed, but in the past, some mills also had tools to prepare the grain by removing stalks, sorting, and cleaning it before grinding.

Modern mills are usually places that sell flour. They might be privately owned and take money or trade for grinding grains, or they might be part of big companies that buy grain before it is ground and then own the flour that is made.

Pests

One common pest in flour mills is the Mediterranean flour moth. The moth babies make a web that can block the machines, sometimes making the mills stop.
