Jiangsu cuisine

Jiangsu cuisine, also called Su cuisine, is one of the eight big cooking styles of Chinese cuisine. It comes from Jiangsu Province, a place near the sea in China. Because of this, many dishes use fish and other fresh foods from the water.
The cooks in Jiangsu choose their ingredients based on the seasons. They also care about how the food looks and tastes. They often use soups to make the flavors even better. The city of Shanghai used to be part of Jiangsu, so its food style is very similar.
Jiangsu cuisine has a few different styles. One of the most famous is Huaiyang cuisine. Other styles come from cities like Nanjing, Suzhou, Wuxi, and Nantong. Each style uses local foods and has its own special taste.
In Wuxi, dishes often have a sweet, caramelized flavor. Some popular foods there are braised spare ribs, fried gluten balls, and Chinese carp soup. They even have a special kind of xiaolongbao that is famous in the area.
