Steaming
Steaming is a fun way to cook food using steam. Imagine hot, tiny drops of water in the air touching the food and cooking it gently. This keeps the food nice and juicy. People often use a special kitchen tool called a food steamer, but you can also steam food in a wok.
People in many places have used steam to cook food for a very long time. In the American Southwest, they used steam pits. Steaming is a healthy way to cook because it helps keep the food's good stuff, called nutrients. It is also faster and uses less energy than boiling because it needs less water. Steam moves heat very well, so food cooks quickly.
Long ago, people in many lands made tools to cook with steam. In places like the Yellow River Valley in China, Gunma Prefecture in Japan, Italy, and Sardinia, they used steam to cook. Today, steaming is very popular, especially in Chinese and other East Asian cooking.
When water boils, it turns into steam. This steam surrounds the food and cooks it without the food touching the water. The steam helps the food stay moist and tender. People often use a special container called a food steamer. It has a lid to keep the steam in. If you don’t have a steamer, you can cook food in a wok by putting a metal frame inside with water below and the food above. Some microwave ovens can also cook food with steam.
Steaming is a good way to cook food. It does not burn food or add extra fat. Many people like steaming because it does not need oil. When food is steamed, it keeps more nutrients than when it is boiled. For example, steaming keeps more good stuff in vegetables, like folic acid and vitamin C. It also helps keep more good stuff in foods like broccoli and carrots.
In many kitchens, steaming is used for vegetables and seafood. In Chinese cuisine, you can find steamed whole fish, steamed crab, and steamed pork. Rice can also be steamed, though in China this is just called cooking. In Thailand, steaming is a simple way to cook. Mexican and Central American cuisine use steaming to make tamales.
In China, there are many delicious steamed dishes. You can enjoy Mantou, which are steamed buns, and Wotou, a type of Chinese cornbread. There are also tasty dim sum dishes like Siu mai, meat dumplings, and Har gao, shrimp dumplings. Steamed rice with crab is a favorite in Fujian cuisine. And don’t forget Chinese steamed eggs, which are like a soft custard.
In Japan, steaming is used to make mochi, which are rice cakes. Glutinous rice is steamed to make these sweet and chewy treats. There are also savory dishes like Chawanmushi, an egg custard, and Gyeran-jjim, a custardy dish from Korea.
