Sweet Potato
Sweet potatoes are yummy root vegetables that many people love to eat. They come from a plant that looks a bit like morning glories, with pretty flowers. The part we eat is the big root under the ground. It can be orange, yellow, purple, or white inside.
People have eaten sweet potatoes for thousands of years. They first grew in warm places like what is now Ecuador. Today, they are grown all around the world. China grows the most sweet potatoes.
Sweet potatoes are very healthy. They have vitamins that help our eyes and bodies stay strong. In many countries, people cook sweet potatoes in different ways. In Japan, they dry them and call them hoshi-imo. In the United States, people love sweet potato casserole, especially at Thanksgiving.
These tasty roots can be boiled, baked, fried, or even made into soup. They are a favorite food in many places because they are easy to grow and very nutritious.
